Falling value measuring instrument method principle:
The suspension of cereal flour (such as wheat flour) is rapidly gelatinized in a boiling water bath, and due to the difference in α-amylase activity, the starch of the gelatinized starch is liquefied in different degrees and the degree of liquefaction is different. The rate of descent in the gelatinizer is different for the stirrer, and the difference in the corresponding alpha-amylase activity is also indicated by the level of the fall value. The lower the fall value, the higher the alpha-amylase activity.
